Kimberly Scardicchio’s (BASC DTR) experience is broad, as a Moderator at the University of Cincinnati OLLI she teaches Longevity and the Mediterranean Diet. Internationally she has taught Mediterranean Cooking Classes in Cincinnati, Ohio for 5 years and for 3 years in Florence, Italy. Additionally, she has hosted events for a variety of Companies, Churches, Schools, Charities, and Gala’s.
Classes are designed to share both dietetic information and nutritional experience gained while living, teaching, and researching in Tuscany and Puglia Italy with “hands on demonstrations” that will encourage others to become comfortable and appreciate the importance of: herbs, spices, fruits, vegetables, fish, meats, and grains. Audiences are able to duplicate dishes, experience delicious meals, share newly acquired knowledge, and adapt to a healthier lifestyle.
The information provided is based on Global Literature Studies introduced by Doctors, Researchers and Dietitians who have passed on the benefits of Food Science and Medical Nutrition Therapy.
